Aioli (Garlic Sauce)




Ingredients:

-1 to 2 cloves garlic (chopped finely and mashed)
-salt and pepper to taste
-1 egg yolk
-1/2 cup of olive oil
-2 tsps. lemon juice



Method:

-mash garlic
-place garlic in bowl with egg yolk and lemon juice
-mix with whisk
-slowly add oil always mixing with whisk
-add salk and pepper to taste


note: can last for weeks in the fridge and can be used as a sauce or dip for sandwiches, meats and vegetables.
