Pork Tenderloin and Chinese Garlic Rib Sauce


Ingredients:

-1 pork tenderloin fillet
-1 cup of light brown sugar
-1 cup of water
-3 cloves of garlic kept whole but crushed
-ginger slices (optional )
-red pepper flakes to taste
-3 tbsp. soya sauce


Method:

(pork)
-cut and roll out the pork tenderloin and pound with mallet until it is roughly half and inch thick
-season with salt & pepper and oil with vegetable/canola oil
-on BBQ, set on high, quickly cook the pork
-set pork aside to rest for 10 minutes


(sauce)
-for the sauce get a medium sized pot
-mix the sugar, soya sauce, red pepper flakes, ginger, 3 cloves of garlic and water together
-simmer on medium-low heat for about 20 minutes until it thickens


(combine)
-slice the pork tenderloin in one inch strips on a diagonal
-add any leftover juices from the pork to the sauce
-add the pork to the sauce
-serve over white rice or chinese vegetables
